Potato Fritters Home Recipe – The Food Medic


Try this great recipe that’s perfect for a light lunch or weekend brunch, or to pop into a lunchbox on working days

Today we’re bringing you some more tasty and nutritious meal inspiration from The Food Medic.  Who doesn’t love a crispy fritter?  Here grilled halloumi and an avocado mash are the perfect accompaniments.

Ingredients – serves 4

1 courgette, grated

500g white potato (approx. 2 medium potatoes), peeled and grated

3 garlic cloves, crushed

1 white onion, diced

3 tbsp gram/chickpea flour

¾ tsp salt

2 tsp paprika

Pinch of pepper

1 large pack halloumi, sliced

2 avocados

1 lime

Chilli flakes (optional)

1 bag rocket leaves

16 cherry tomatoes, sliced into quarters


Begin by draining the water out of the grated courgette and potato.  You can do this by placing them in a clean tea towel and wringing the liquid out.  Empty the veg into a bowl once they’re drained.

Add the crushed garlic, diced onion, gram flour, salt, paprika and pepper to the bowl and combine.

In a large saucepan over a medium heat, add a large glug of olive oil.  Split your mixture in to 8 fritters, then fry them in a couple of batches.  Fry them in the pan for around 3 minutes on each side until crispy and cooked through.

Meanwhile grill the halloumi, and in a bowl mash the avocados and squeeze the juice of the lime over it to keep it fresh.  Stir through some chilli flakes.

Line your serving dish (or lunch boxes) with rocket and tomatoes, then pile on the fritters and halloumi topped with dollops of the avocado smash.  If filling a lunch box, allow two fritters per person.

Celebration Carrot Cake: everyone loves a carrot cake, and we’ve created a splendid new 3-tiered carrot cake that’s perfect for special occasions.  Serves 6 – 8.

Small Chocolate Macaron Cake: our Chocolate Macaron Cake is a best seller after only a few weeks, and this is its baby brother. Serving 6 - 8 (rather than 10 – 12) it’s just as decadent. Layers of chocolate sponge, filled with strawberry jam and chocolate butter cream; smothered in more butter cream, topped with a dripping chocolate glaze and decorated with chocolate meringue rosettes, chocolate and caramel mini macarons, gold sugar balls and curls of gold leaf. 

Victoria Sponge Cake: another perennial favourite of the tea table, given a taste of France - with a filling of PAUL Strawberry Jam and Chantilly Cream.  Serves 4 – 6.

Cherry Clafoutis: when you’re looking for something different for dessert, try this French classic. A creamy egg custard enriched with ground almonds, filled with Morello cherries, topped with flaked almonds and baked. It’s particularly good served warm with a dollop of cream or crème fraîche.  Serves 6.

Mixed Berry Swirl Cheesecake: another pretty dessert! Hidden filling of coulis made with strawberry, blackberry, morello cherry and redcurrant; with more swirls of coulis on top. Serves 6 – 8.

We’re pleased to say that we’ve expanded our delivery service to cover all postcodes in London Zone 1 and Zone 2.  Next day delivery is available, as long as orders are placed before 12 noon on the day before delivery is required.  Deliveries will take place between 9am and 1pm. 

The range available for home delivery includes a selection of our best-selling artisan breads, favourite Viennoiseries including croissants, pain au chocolat, escargot raisin, croissant amandes and mini chocolate beignets. 

There are also plenty of sumptuous cakes to choose from, including customer favourites such as the Fraisier, Framboisier and Craquant, alongside new additions to the range including elegant summery cheesecakes and spectacular celebration cakes.

Chocolate Caramel Biscuit Home Recipe – The Food Medic


Ooh – it’s a Chocolate Caramel Biscuit Bar Food Medic recipe, just the thing for a tea or coffee and biscuit break

These absolutely irresistible Chocolate Caramel Biscuit Bars need to be kept in the fridge.  They’re just so good with a cuppa – another great recipe idea for all the family to enjoy, courtesy of The Food Medic

Ingredients – makes 8 bars

For the base:

90g oats

90g almond flour (or blend whole almonds into a flour yourself)

70g smooth peanut butter

2 tbsp maple syrup

1 tbsp milk (dairy or dairy alternative)

For the caramel layer:

300g dates, pitted

50g smooth peanut butter

1 tbsp vanilla extract

2 tbsp milk (dairy or dairy alternative)

For the coating:

175g dark chocolate

2 tbsp coconut oil, melted


Begin by soaking the dates for the caramel layer in boiling water for 10 minutes to allow them to soften.

Meanwhile blend the oats for the base layer into a flour and combine in a bowl with the almond flour.

Add the remaining base layer ingredients (peanut butter, maple syrup and 1 tbsp of milk) and combine until the mixture forms into a ball.

Line a square baking tin and flatten the ball of mixture into the base (sometimes using the back of a spoon makes this process easier).  Place it in the freezer to set whilst you make the caramel layer.

Next drain the dates that have been soaking and add to a blender along with the other caramel layer ingredients (peanut butter, vanilla extract and 2 tbsp of milk).   Blend until smooth.  You may need to scrape the sides down a couple of times.

Remove the base layer from the freezer and pour the caramel layer on top and smooth.  Place the tin back in the freezer for approximately 1 hour 30 minutes.

Remove from the tin and carefully slice into bars (we made 8 from this recipe).  Place them on a lined baking tray and back into the freezer whilst you prepare the chocolate.

Melt the chocolate in a bowl over a saucepan of gently simmering water and combine with the coconut oil, stir to combine.  Remove the bars from the freezer and dunk the bars in the chocolate.  It’s easier to do this in two batches, keeping half of the bars in the freezer to stay cold whilst you cover the other half in the chocolate.

Once all are covered in chocolate, place them all back in the freezer for 5 minutes to set before eating.  They’re lovely topped with a few sea salt flakes if you wish.  Store in the fridge or freezer until you’re ready to serve them.

Lemon and Chia Biscuits Home Recipe – The Food Medic


Try this recipe for Lemon and Chia Biscuits – a bit of home-baked sunshine

We’re sure you’re going to love this summery, lemony biscuit recipe from The Food Medic.  If you use a dairy-free yoghurt, they will also be vegan.

Ingredients – makes around 18 biscuits

1 lemon, zest and juice

25g chia seeds

90ml plain yoghurt (or dairy-free alternative)

50ml maple syrup

160g whole wheat flour

1 tsp baking powder


Pre-heat the oven to 180c and line two baking trays with baking parchment.

In a mixing bowl, combine the flour, baking powder and chia seeds.

Next add the lemon juice and zest, yoghurt and maple syrup.

Combine until a ball of dough forms.

Sprinkle some flour on a work surface and use a rolling pin to roll your mixture flat.

Cut out the biscuits with a small cookie cutter and place them on the baking trays.

Finish by baking them in the oven for 10-12 minutes.  Leave to cool slightly before tucking in.  Bon Appétit!

Chickpea & Tomato Pasta Home Recipe – The Food Medic

Try this simple store cupboard pasta recipe from The Food Medic for some tasty and nutritious summer inspiration

We’re sharing some great summer food ideas from The Food Medic to inspire you to enjoy cooking and sharing great tasting feel good food.

This recipe can be put together swiftly with a combination of store cupboard standbys and healthy fresh vegetables.

Chickpea & Tomato Pasta – Serves 4


1 tin chickpeas, drained and rinsed

1 red pepper, thinly sliced

1 orange pepper, thinly sliced

150g cherry/plum tomatoes, quartered

2 tbsp extra virgin olive oil

1 tin chopped tomatoes

150ml vegetable stock

2 tsp harissa paste

2 garlic cloves, crushed

1 tsp Italian seasoning

1/2 tsp salt

280g whole wheat penne pasta

100g fresh spinach

Chilli flakes (optional)


Pre-heat the oven to 180c.  Scatter the drained chickpeas, sliced peppers and quartered tomatoes into a large baking tin or tray and drizzle with the olive oil.  Season with salt and roast in the oven for 25 minutes.

After the first 10 minutes of roasting, begin making the sauce.  In a large saucepan on a medium heat, add the chopped tinned tomatoes, vegetable stock, harissa paste, garlic, Italian seasoning and salt.  Stir occasionally and allow to simmer whilst it thickens.

Meanwhile bring a separate saucepan of water to boil on a medium heat and add the pasta.  Cook as per the instructions in on the pack (for approx. 12 minutes).  Once cooked, drain and rinse with cold water.

Add the pasta, roasted chickpeas and veg and the spinach to the tomato sauce and combine.  Cook for a few minutes until the spinach has wilted.  Add some chilli flakes to the sauce if you want it to have a little more heat, then serve. 

This would be tasty accompanied by a slice or two of PAUL multigrain bread to mop up any leftover sauce.

The recently re-opened PAUL bakeries above will offer bread, pastries, treats, bundles, soft drinks and more on the menu to takeaway, subject to availability as well as on Uber Eats & Deliveroo.  Service is via window or door only (some stores now allowing sit-in!), cashless payments only (including the PAUL UK APP), and we have strict queuing systems in place that respect social distancing requirements.

Our Acton Bread Market & Delivery Hub

Launching a bread market from our central bakery has been a journey in itself; and as weeks have gone on, we have worked hard with our teams to launch an At Home range available for delivery from a number of London postcodes. While we work on making delivery available to as many London postcodes as possible, we are currently operating a 48 hour notice period and depending on your location you will see specific days available to place your orders on - at the moment, we are not able to provide specific slots but we will aim to deliver between 9am - 1pm.

The Acton delivery menu will be available from 8am – 4pm and includes bread, sweet tartlets and mini doughnuts as well as boxes with options including a choice of fresh fruit, fresh vegetables and dairy. In addition, our Acton Bread Market is available to visit and takeaway 8am –4pm on Saturday or Sunday only, offering a similar menu. This will only take cashless payments and will have a strict queuing system in place to keep everyone safe.



Put it in your diaries: on Monday 20th July we’re launching a brand new range of fantastic recipes for summer.  Developed in partnership with Dr. Hazel Wallace, also know as The Food Medic, the new collection is our way of doing more every day to make it easy for our customers to choose Feel Good Food that tastes so delicious it makes positive lifestyle choices not just easy but a genuine pleasure.

The range will include options to take you right through the day including breakfast pots, sweet and savoury open sandwiches, salads, sandwiches and rolls.

If you've been following our updates over the course of the last few weeks, you'll have seen that we're working hard to both re-open our PAUL shops gradually and safely but also ensure that we can offer PAUL products to our customers through delivery via our website as well as Deliveroo, Uber Eats and Just Eat. It gives us great pleasure to then offer our customers the option to Click & Collect PAUL favourites from their nearest re-opened PAUL shop especially if delivery through our website and other delivery channels are not possible.

Feeding our Frontline

The extraordinarily brave and dedicated frontline workers putting their lives on the line for us deserve all the support we, as food providers, can give them.  At PAUL we’re proud to be a part of the Feed our Frontline coalition, joining our colleagues in the wider hospitality industry to help NHS hospitals in London feed frontline staff.  

As part of this initiative, we are delivering breakfast every day to the staff of the Royal Free London Hospital.  Food from Feed our Frontline is delivered absolutely free to hospitals and their staff, with this service running on goodwill and essential costs which are covered by generous donations. If you work in the NHS and need food, or know someone who does, go to:

In addition to this, we are donating fresh food such as croissants and pastries, bread, large tarts, individual tartlets, macarons and mini beignets to care homes, local hospitals and other frontline teams such as the ambulance service.

At the moment we have over 30 of our shops open for takeaway (and some for dine-in), and those shops are offering free hot drinks* to frontline workers, as well as prioritising them in service. 

We want to say ‘merci’ to our NHS and other frontline workers.  In this time of crisis, we know we’re stronger together.

A Letter from our CEO

To our loyal customers,

Firstly I'd like to thank you for your continued support throughout these unprecedented times.

I want to personally reassure you that while many of our local bakeries are still open for business as usual, the welfare of our customers and our teams is our highest priority. We're closely following the advice of the government and WHO in all our bakeries regarding the most rigorous standards of hygiene and travel procedures.

From Friday 20th March 2020, we will be implementing the following measures across all of our bakeries**:

  1. FREE coffee and tea for NHS workers – To thank UK health professionals for their amazing hard work during these tough times, we'll be offering free takeaway coffee and tea to all NHS staff. *Offer ended.
  2. Enjoy a free loaf on us - We are offering buy one get one free on our 400g and 800g bread loaves to enjoy and send to family, friends and loved ones. *Offer ended.
  3. Deliveries - We are looking to expand our delivery service as soon as possible, so we can continue to support the community. Currently we run our own service and same day delivery is also available via UberEats, Deliveroo & Just Eat.
  4. Takeaway only - We will be temporarily closing all seating areas and removing all crockery. *Update - some shops are now open for dine-in.
  5. Reusable cups – We have paused the use of reusable cups, however we will continue to honour the 50p discount to those who bring in their own cup.
  6. Contactless payments – We will only accept contactless payment methods, this will be implemented across all shops by the end of next week.

We continue to follow developments and advice closely and will take whatever action is required to keep our customers and our teams safe and well. You can expect some changes to our opening hours as we respond to changing needs, and a handful of our shops will be closing temporarily until further notice.

We’ll be selling freshly baked loaves straight from the oven, direct to Londoners.  You’ll be able to buy from our full range of artisan bread – subject to availability.  Choose from all your favourites – baguettes, 400g and 800g loaves of white, wholemeal, multigrain, sourdough and more!

Our bread also freezes very well, so you can always buy a little extra and pop some in the freezer. We look forward to seeing you at The PAUL Bread Market.
